¼ cup Lemon juice (fresh preferred)
½ cup Olive Oil
1 tsp Dijon mustard
½ tsp Salt
¼ tsp Pepper
Assemble all of the ingredients in a mason jar (or a jar with a lid.)
After the ingredients are in the jar, top with the lid, making sure it’s closed tightly.
Now shake! Do this for about 15-20 seconds until the ingredients come together. This is called emulsion! (One clue that this is happened is that the vinaigrette will have turned a light yellow color.)
Pour your vinaigrette over salad, use it as a dip for vegetables or as a marinade for roasted vegetables and meats! Ask the adults in your home to experiment with you.
